This Italian Saison offers a rustic, vineyard-inspired profile shaped by seven months of maturation in oak barrels. The influence of indigenous yeasts and bacteria from the winery introduces a bright, lemony acidity and a complex wild character. On the nose, delicate floral and earthy hop notes from the dry-hopping mingle with spicy phenols and tart stone fruit. The palate is exceptionally dry and refreshing, featuring a lean, grainy malt backbone and a vibrant, acidic snap that reflects its mixed-fermentation heritage. It concludes with a crisp, wood-inflected finish, perfectly capturing the essence of a traditional, thirst-quenching farmhouse ale.
Appearance. Pale gold to light amber (6 SRM); hazy with a dense, rocky, long-lasting ivory head; high effervescence and notable lacing.
Aroma. High intensity bouquet featuring lemon zest, green apple, and white grape esters; prominent spicy black pepper phenols; earthy and floral hop notes are present alongside a rustic, barnyard funk and a touch of neutral oak.
Taste. Initial sharp, refreshing acidity; cracker-like grainy malt flavor; low hop bitterness with the tartness providing the primary balance; notes of citrus peel and hay; extremely high attenuation leads to a bone-dry finish with a lingering spicy and slightly woody aftertaste.
Mouthfeel. Light body; very high carbonation providing a prickly, effervescent sensation; low alcohol warmth; slight acidic astringency that enhances the refreshing character; no residual silkiness.
