Siemàn Istà Rose is a sophisticated Straight Sour Beer that elegantly integrates viticultural influence into a wild ale framework. Mixed fermentation with indigenous yeasts provides a complex, farmhouse character, further refined by five months of maturation in oak barrels. The addition of Tai Rosso grapes imparts a delicate red fruit profile and a subtle vinous structure, while a measured dry-hop adds a refreshing floral lift. The result is a vibrant, highly attenuated beer where the sharp lactic acidity is balanced by fruity esters and light wood tannins, finishing crisp and bone-dry with a lingering essence of tart grapes and meadow herbs.
Appearance. Pours a beautiful rose-pink to soft copper color with a slight haze. It features a lively, frothy white head with moderate to poor retention, typical of the style's high acidity, and exhibits high effervescence.
Aroma. Moderate to high intensity of clean, lactic sourness reminiscent of fresh lemon. Prominent notes of red berries and grape must from the Tai Rosso grapes are supported by a light, earthy funk. A subtle floral hop character and a hint of biscuity malt and neutral oak round out the bouquet.
Taste. A sharp, lemony lactic acidity dominates the initial palate, quickly followed by the tart flavor of red grapes and a light tannic structure. Low cracker-like malt flavors provide a lean foundation. The finish is very dry and crisp, with no detectable hop bitterness and a clean, refreshing aftertaste of tart fruit.
Mouthfeel. Light-bodied with high carbonation that creates a prickly, champagne-like sensation. The acidity is crisp and mouth-watering, with no perceived alcohol warmth. A very slight tannic astringency from the grapes and oak adds a pleasant drying effect.
