Siemàn Incrocio represents a sophisticated marriage of Italian viticulture and wild fermentation, maturing for twelve months in oak before refermenting on Incrocio Manzoni and Moscato Bianco grapes. The result is a vibrant Wild Specialty Beer where the floral, perfumed aromatics of Moscato Bianco and the elegant stone fruit character of Incrocio Manzoni harmonize with a rustic, indigenous funk. Unfiltered and bottle-conditioned, it displays a complex tapestry of tart white grapes, lemon-like acidity, and structured wood tannins. The long barrel maturation softens the wild edge, producing an evolving, vinous profile that celebrates the terroir of the Berici Hills while maintaining a crisp, refreshing finish.
Appearance. Deep gold to light amber (SRM 6-8). Unfiltered with a persistent slight haze. Head is white, thin, and moussy with low retention typical of high-acidity wild ales.
Aroma. High intensity with pronounced floral and grape-like esters from Moscato Bianco, complemented by stone fruit notes of Incrocio Manzoni. Wild fermentation contributes complex funk, including hay and light barnyard notes. Subtle vanilla and toasted wood emerge from the oak barrels.
Taste. Initial sharp lactic acidity and tart citrus. The grape character is dry but expressive, featuring white currant and grape skins. Low bitterness. Fermentation is bone dry with a lingering rustic funk and a clean, acidic finish. Nuanced oak tannins provide a wine-like structure and complexity.
Mouthfeel. Medium-light body. High carbonation provides a lively, spritzy sensation on the palate. Noticeable but pleasant tannic astringency from grape skins and wood maturation. Clean, crisp mouthfeel with very minimal alcohol warmth.
