Siem n Incrocio Rosso is a sophisticated Italian Grape Ale that beautifully bridges the gap between wild ale and natural wine. Indigenous yeasts and bacteria provide a complex, earthy funk that harmonizes with twelve months of oak aging. The addition of Tai Rosso, Turchetta, and Pinot Nero grapes introduces vibrant sensory layers of red cherry, raspberry, and pomegranate. The aroma is high in intensity, blending vinous esters with subtle barnyard notes. On the palate, a delicate lactic acidity balances a restrained malt base, leading to a dry, tannic finish reminiscent of a fine red wine. It is a masterful, evolving expression of Berici Hills terroir.
Appearance. Deep ruby to garnet red in color (18-22 SRM). It features a pinkish, fine-beaded head with moderate retention and light lacing. Clarity is generally good, though a slight haze is present from bottle conditioning.
Aroma. High intensity with prominent red fruit esters of cherry and strawberry from the Tai Rosso, Turchetta, and Pinot Nero grapes. A distinct wild character presents as earthy funk, leather, and light barnyard notes. Subtle oak-derived vanillin and a hint of toasted wood are present; hop aroma is absent.
Taste. Tart red fruit flavors of cranberry and sour cherry lead the palate. Malt flavor is low and neutral, providing a light crackery backdrop that is quickly overtaken by refreshing lactic acidity. Hop bitterness is very low, allowing grape tannins to provide structure. The finish is very dry, clean, and lingering with a touch of wood-derived spice.
Mouthfeel. Medium-light body with high carbonation that creates a prickly, effervescent sensation. A noticeable but pleasant tannic astringency from the grape skins and oak maturation adds a wine-like structure. Alcohol warmth is very low and well-integrated.
