Siem an Bloody Side is a striking Wild Specialty Beer that beautifully marries rustic complexity with vibrant fruit expression. Fermented with indigenous yeasts and bacteria, then matured for twelve months in oak barrels, it delivers an exquisite tapestry of funk, wood, and bright acidity. A massive addition of sour cherries from the Lepini hills drives the sensory experience, infusing the beer with deep, jammy stone fruit character and a piercing tartness. The interplay between the earthy Brettanomyces funk, subtle tannins from the oak, and the brilliant, lactic sour cherry bite creates a dry, refreshing, and deeply layered masterpiece.
Appearance. Brilliant, deep ruby-red to garnet with a beautiful pink-tinted head that forms quickly but recedes to a thin, persistent collar. Excellent clarity despite the wild fermentation, with light effervescence visible.
Aroma. High intensity. Dominated by vibrant, freshly crushed sour cherries, showcasing both sweet flesh and almond-like pit character. Complex wild aromatics follow, featuring earthy funk, barnyard notes, leather, and a sharp, clean lactic acidity. Subtle toasted oak and light vanilla undertones from the twelve-month barrel aging tie the elements together. No hop aroma.
Taste. Initial impression is a sharp, refreshing wave of lactic tartness integrated with intense, juicy sour cherry flavor. The cherries provide fruitiness without sweetness, finishing dry. Mid-palate reveals complex rustic funk along with delicate woody tannins from the oak barrels. Hop bitterness is extremely low, with the structure instead balanced by clean acidity and fruit-derived dryness. The finish is long, dry, and mouthwatering, leaving lingering impressions of cherry skins and oak.
Mouthfeel. Medium-light body with a refreshing, puckering sensation. Carbonation is moderate to high, enhancing the lively, effervescent quality. A very light, pleasant astringency from the cherry skins and oak tannins adds structure without being harsh. Alcohol warmth is a very subtle, warming presence.
