This Wild Specialty Beer is a sophisticated expression of Italian terroir, blending wild fermentation with the vibrant character of the Berici Hills. Aged for 12 months in oak barrels with indigenous yeasts, it achieves a complex rustic funk of leather and earth. The addition of fresh blackberries and Tai Rosso grapes creates a deep, vinous profile, bursting with dark berry tartness and red wine complexity. On the palate, the beer is bone dry, allowing the sharp lactic acidity to highlight the juicy fruit flavors while subtle oak tannins provide structural elegance. A lively carbonation lifts the finish, leaving a lingering, fruity, and pleasantly funky aftertaste.
Appearance. Deep ruby to violet hue (20-30 SRM) with a soft, pink-tinted head that shows moderate retention. The beer is unfiltered and presents a slight to moderate haze with fine, rising bubbles from bottle conditioning.
Aroma. High intensity featuring a complex blend of Brettanomyces funk—think barnyard, hay, and leather—intertwined with sharp blackberry bramble and vinous Tai Rosso grapes. Low notes of toasted oak and vanilla are present, with a clean lactic tartness providing a bright aromatic lift.
Taste. An initial impression of sharp, refreshing acidity followed by layers of tart blackberry and dark cherry-like grape flavors. The profile is extremely dry with no residual sweetness. Moderate oak tannins and grape skin phenolics add complexity and structure. Bitterness is very low, as the balance is driven by acidity and fruit. The finish is long, dry, and distinctly vinous.
Mouthfeel. Medium-light body with high, spritzy carbonation that provides a prickly sensation on the tongue. There is a slight tannin-driven astringency from the fruit skins and oak, which enhances the perceived dryness. Alcohol warmth is light and well-integrated.
