This vibrant farmhouse ale, a biere de coupage aged for six months in oak, presents a complex marriage of rustic funk and modern hop aromatics. The indigenous yeasts impart layers of leather and wet hay that harmonize with the intense tropical profile of Pacific Sunrise hops. Expect bright bursts of Seville orange, ripe melon, and stone fruit set against a backdrop of subtle toasted oak. The blending process ensures a lively, fresh hop presence that pierces through the dry, cellar-like depth, resulting in a sophisticated yet highly approachable wild ale with a crisp, wine-like elegance.
Appearance. Straw to deep gold (4–6 SRM). Displays a slight haze typical of a dry-hopped wild ale. Features a moderate, white, frothy head with good retention and delicate lacing.
Aroma. Moderate-high intensity. Initial citrus and tropical notes of orange peel and melon from the Pacific Sunrise hops are layered over a funky, indigenous yeast character of wet hay, leather, and stone fruit esters. Subtle vanillin and wood notes emerge from the oak aging.
Taste. Bright and citrus-forward with flavors of tangerine and apricot. The fermentation character is bone-dry and crisp, showing moderate earthy funk and a light, non-lactic tang. Hop bitterness is moderate, providing a clean counterpoint to the subtle toasted oak tannins. The finish is remarkably dry and lingering with a citrus-rind aftertaste.
Mouthfeel. Medium-light body with high, prickly carbonation. Finishes very dry and crisp. Features a very light oak-derived astringency that adds structure without being harsh. Alcohol warmth is negligible.
