Tides (2024) is a sophisticated Oak Aged Blended Farmhouse Pale that marries the rustic soul of a Saison with vibrant tropical complexity. The integration of Nelson Sauvin hops provides a signature white wine and gooseberry brilliance that intertwines seamlessly with the lush refermentation of passion fruit, orange, and guava. High attenuation and a meticulous blend featuring Brettanomyces-influenced components offer an underlying leather and funk profile, softened by time in oak foedres. The result is a bone-dry, effervescent experience where the wood tannins provide structure against a backdrop of bright citrus and tropical esters, culminating in a crisp, lingering finish.
Appearance. 6-8 SRM, pale orange hue; persistent, rocky white head with fine Belgian lacing; slightly hazy due to dry-hopping and fruit refermentation.
Aroma. High intensity featuring a complex bouquet of fresh guava and passion fruit. Nelson Sauvin dry-hopping adds distinct notes of crushed white grapes and gooseberries. The fermentation profile offers spicy black pepper, light floral honey, and a delicate funk. Subtle oak-derived vanillin and a dry, leathery undertone emerge from the foedre aging.
