Imperial Stout 15 º
Symmetry is a monumental Imperial Stout, born from a years-long collaboration between Side Project and Crooked Stave. It reveals an opulent landscape of dark-roasted malts, evoking high-percentage cacao and espresso. The extensive aging—spanning 25 to 64 months—in Willett and Heaven Hill bourbon barrels imparts deep layers of charred oak, toasted caramel, and rich leather. The integration of Madagascar and Mexican vanilla beans creates a lush, creamy foundation that beautifully buffers the warming heat of its 15% ABV. Freshly ground cinnamon adds a sophisticated, spicy flicker to the finish. Each sip is a complex, velvet-textured union of barrel-driven sweetness and intense roasted depth.
Appearance. Jet black and completely opaque (40+ SRM). The pour is viscous, producing a dark tan, fine-bubbled head with moderate to low retention. Thick, slow-moving legs are visible on the glass, indicative of high alcohol and residual sugar.
Aroma. High intensity with a decadent bouquet of bittersweet chocolate, espresso, and molasses. The barrel character is prominent, offering woody bourbon, toasted coconut, and vanillin. Madagascar and Mexican vanilla provide a floral, creamy sweetness, while the ground cinnamon contributes a warm, spicy top note. Low dark fruit esters of prune and fig.
Taste. Initially rich and sweet with deep layers of dark chocolate and roasted grain. The bourbon barrel influence is assertive, introducing caramel and charred oak flavors. Vanilla beans provide a silky, dessert-like complexity that balances the moderate roasted bitterness. The cinnamon is integrated, providing a drying spice in the mid-palate. The finish is long and lingering with notes of fudge, spice, and smooth bourbon warmth.
Mouthfeel. Full-bodied and exceptionally viscous with a chewy, coating texture. Carbonation is low to moderate, enhancing the velvety mouthfeel. A significant but well-integrated alcohol warmth is present, without being sharp or solventy. No perceived astringency.
