This collaboration captures a complex intersection of rustic ale and refined lager. Aromas of bright lemon zest and apricot meld with a nuanced Brettanomyces funk of dried hay and soft leather. The influence of twelve months in French Oak provides a delicate structural tannin, supporting the bright acidity and esters found in the blended threads of Oude Fermier, Home, and Sunsets. On the palate, a crisp, grainy lager base is elevated by peppery phenolics and a vibrant effervescence. It concludes with a signature bone-dry finish, leaving a lingering impression of orchard fruit and earthy, wild yeast character.
Appearance. Pale straw to bright gold (5–7 SRM) with a slight, persistent haze. Features a dense, rocky, snow-white head with excellent retention and delicate lacing.
Aroma. High intensity with a complex profile of lemon peel, white pepper, and a rustic Brettanomyces funk reminiscent of leather and dusty hay. Low grainy malt sweetness is countered by floral, earthy hop notes and a subtle whisper of toasted vanilla from the French Oak.
Taste. Initial citrus sharpness evolves into layers of pome fruit and spice. The malt profile is soft and grainy, providing a canvas for farmhouse funk. Firm but integrated bitterness joins oak-derived tannins to balance the fermentation character. Finishes exceptionally dry, clean, and lingering with a spicy, wild yeast aftertaste.
Mouthfeel. Medium-light body with high, effervescent carbonation that tingles the palate. A light, well-integrated alcohol warmth is present. Smooth with a subtle tannic grip but no astringency.
