SpontanFermier (Blend #2) is a masterful marriage of Missouri Saison and Belgian Lambic, presenting a vibrant tapestry of wild fermentation. This collaboration between Side Project and Mikkeller exudes a complex sensory profile defined by bright stone fruits and a refined, earthy funk. The aroma is a heady mix of lemon zest, aged hay, and subtle oak, reflecting its barrel-aged heritage. On the palate, a crisp, vinous quality emerges, supported by the dry finish characteristic of Brettanomyces. It balances the rustic, peppery spice of a Saison with the deep, multifaceted acidity and barnyard nuances of traditional Lambic, resulting in a sophisticated, highly attenuated masterpiece.
Appearance. Pours a hazy, pale straw to deep gold (SRM 3-6). Features a voluminous, frothy white head with excellent persistence and intricate lacing that clings to the glass.
Aroma. High intensity and multifaceted. Dominant notes of Brettanomyces funk include wet hay, horse blanket, and aged leather. Fruit-forward esters of apricot, green apple, and Meyer lemon zest are prominent. A subtle rustic grain character and soft vanillin from oak barrels provide a nuanced backdrop.
Taste. Initial impression is bone-dry and effervescent. Malt flavors are low, appearing as cracker or raw wheat. Fermentation character is aggressive but balanced, featuring peppery phenols, tart citrus, and a complex funk. Hop bitterness is very low, as the structural balance is provided by a light lactic acidity and oak tannins. The finish is exceptionally clean, dry, and lingering with a vinous aftertaste.
