Saison du Fermier Blend #4 is a masterclass in the American farmhouse tradition, merging a robust, pale malt structure with the wild complexity of Missouri-native Brettanomyces and Lactobacillus. This Saison pours a hazy, radiant gold, releasing a high-intensity bouquet of zesty lemon, rustic hay, and subtle white wine tannins acquired from several months of wine barrel aging. The palate is defined by a bright, lactic acidity that carves through grainy malt, leading to a bone-dry finish. Expect layers of stone fruit and cracked pepper, sophisticated oak-derived depth, and a lively, effervescent mouthfeel that elegantly integrates its 7% alcohol presence behind refreshing tartness.

Appearance. Pale gold (5 SRM), with a long-lasting, dense, rocky white head and significant Belgian lacing. Unfiltered and hazy with visible effervescence.

Aroma. High intensity with a complex blend of tart lemon, green apple, and rustic Brettanomyces funk suggesting damp hay and earthy cellar. Pronounced vinous notes and oak from barrel aging complement spicy black pepper phenols and soft, grainy malt.

Taste. Initial tartness from Lactobacillus provides a bright, citrusy opening. The mid-palate offers grainy malt and stone fruit esters, giving way to oak tannins and a spicy, peppery fermentation character. The finish is exceptionally dry and crisp with a lingering, pleasant acidity and low hop bitterness.

Mouthfeel. Medium-light body with very high, prickly carbonation. A noticeable but well-integrated alcohol warmth is present. Highly attenuated and crisp with a light tannic structure from the wine barrels.
