This refined Saison showcases a masterful blend of fluffy wheat-driven textures and the vibrant acidity of local Missouri microflora. The aroma is an elegant bouquet of lemon zest and white grape, courtesy of extensive aging in Chardonnay barrels, underpinned by the soft vanillin and toasted coconut nuances of American Oak foedres. On the palate, the expansive, billowy mouthfeel of the wheat malt balances a bone-dry body. Layers of stone fruit and tart citrus merge with a rustic, earthy funk, while the oak provides a structured, vinous finish. Effervescent and complex, it exemplifies the harmony between traditional farmhouse roots and barrel-aged sophistication.
Appearance. Pale straw to light gold (4–6 SRM). Hazy, unfiltered appearance with a dense, persistent, billowy white head and excellent Belgian lacing.
Aroma. High intensity. Bright lactic tartness, lemon peel, and green apple esters. The Chardonnay barrels contribute notes of white grape and pear, complemented by soft American Oak vanilla and a rustic, earthy funk from the house microflora. Low grainy wheat malt presence.
Taste. Bracingly tart but balanced. Initial flavors of lemon and unripe stone fruit give way to a soft, cereal-like wheat character. Hop bitterness is low, as acidity provides the primary balance. The finish is exceptionally dry and crisp, with lingering notes of dry oak tannins and a delicate vinous quality.
Mouthfeel. Medium-light body with a unique creamy, billowy texture from the heavy wheat focus. High, effervescent carbonation. Very low alcohol warmth. Mild acidic prickle on the tongue with no harsh astringency.
