This celebratory Missouri Wheat Saison presents a sophisticated tapestry of rustic grains and refined wood. The substantial use of Missouri Wheat lends a soft, bready texture that carries vibrant aromas of Meyer lemon, white pepper, and wild floral esters. Ten years of brewing expertise shine through the delicate integration of oak aging, contributing whispers of vanilla and a structured, tannic dryness to the palate. The profile is remarkably effervescent and bone-dry, balancing a light lactic tartness with earthy hop notes. It is a masterful expression of terroir, where the spicy character of native yeast meets the elegant, drying influence of seasoned timber.

Appearance. Pale straw to light gold (4-6 SRM). Hazy and unfiltered with a massive, rocky white head that shows excellent persistence and thick Belgian lacing.

Aroma. High intensity; dominated by spicy black pepper and citrusy esters like lemon and grapefruit. Soft, grainy Missouri Wheat provides a bready base, complemented by earthy hops and a refined vanillin-oak character with a hint of rustic, farmyard funk.

Taste. Initial sharp carbonation leads to flavors of tart lemon, rustic wheat, and spicy yeast phenols. Hop bitterness is moderate but feels firm due to extreme attenuation. The mid-palate reveals subtle oak tannins and a dry, woody complexity. Finishes bone-dry and crisp with a lingering floral aftertaste.

Mouthfeel. Medium-light body with a creamy yet prickly effervescence. High carbonation enhances the dry finish. Very low alcohol warmth; a slight, pleasant oak-derived astringency provides structure without being harsh.
