Side Project’s Rosé Du Blé (Blend #3) is a delicate session-strength Saison that captures the elegance of a French rosé. Brewed with a significant wheat portion, this expression is transformed by Missouri Chambourcin grape skins and a native Missouri oak foeder aging process. The profile leads with vibrant aromatics of red berries and bright floral notes, underpinned by a complex funk from wild Brettanomyces and a sharp, refreshing acidity from Lactobacillus. Despite its low alcohol content, the beer offers depth through subtle wood tannins and a bone-dry, effervescent finish, showcasing a masterfully balanced harmony between rustic farmhouse traditions and vinous character.
Appearance. Displays a beautiful pale pink to salmon-rose hue (roughly 5-7 SRM including tint). It features a moderate to high haze from the wheat and skin contact, topped by a dense, rocky, light pink-tinted head with excellent persistence and fine Belgian lace. Highly effervescent.
Aroma. High aromatic intensity featuring a blend of bright red fruit and grape must from the Missouri Chambourcin skins. Distinctive wild Brettanomyces notes of damp hay and leather merge with a sharp, lemony Lactobacillus tang and spicy, peppery esters. Low bready wheat malt and a whisper of vanilla and toasted wood from Missouri oak foeders provide a rustic foundation.
Taste. Initial impression is sharply tart and refreshing. The palate is dominated by vinous grape flavors, tart cherry, and lemon zest, supported by a soft, grainy wheat malt presence. Fermentation character is complex, with spicy phenols and earthy funk. Hop bitterness is low, as the Lactobacillus acidity provides the primary balance against the dry malt. It finishes exceptionally dry and crisp with a lingering, spicy aftertaste and light tannic structure.
Mouthfeel. Light body with an airy, spritzy character due to very high carbonation. There is no perceived alcohol warmth at this session strength. A light, pleasant puckering acidity and subtle wood-derived tannin provide a clean, structural mouthfeel without any harshness or astringency.

Rosé du Blé is our Wheat Saison that is fermented with wild Brettanomyces and Lactobacillus from our family’s farm and aged in our Missouri Oak Foedre. At maturity, it was racked atop the skins of Oregon bramble berries, adding the color, tannins and aromatics inspired by the rosé wines of France.  

ABV:  6%  |  750ml
