Rosé du Blé is a nuanced Saison that marries a rustic wheat base with the vinous elegance of Missouri Chambourcin grapes. Fermented with family-farm-derived Brettanomyces and Lactobacillus, the sensory profile is defined by a delicate balance of lemony acidity and earthy, wild funk. Aging in Missouri Oak foedres adds a structural backbone, while the grape skins impart a distinct rosé-inspired character—expect bright red berry aromatics and a whisper of floral tannin. This effervescent ale presents a sophisticated interplay of spicy yeast phenols and stone fruit esters, finishing bone-dry with a lingering, wine-like sophistication that reflects its time spent maturing in wood.
Appearance. Soft pinkish-ruby to deep rosé hue with a hazy, unfiltered appearance. Topped by a dense, ivory head with a slight pink tint that shows moderate retention and fine Belgian lacing.
