This sophisticated Brett Beer highlights the intersection of a clean lager base and the rustic complexity of Missouri Oak. Native microflora imparts a vibrant sensory profile, beginning with an aromatic bouquet of white peach, lemon zest, and a delicate, earthy funk reminiscent of sun-dried hay. The palate is exceptionally dry and effervescent, where the foedre aging introduces subtle nuances of toasted coconut and structural wood tannins that provide a refined snap to the finish. Bright fruit esters and a hint of leathery depth dance over a lean, crackery malt backbone, resulting in a masterfully balanced and refreshing wild lager character.
Appearance. Pours a brilliant straw to pale gold (SRM 3-4) with a pillowy, bright white head that shows moderate retention and leaves light, wispy lacing on the glass.
Aroma. High intensity featuring a complex blend of tropical fruit esters like pineapple and apricot, layered with citrus zest. A distinct native funk provides notes of barnyard and wet hay, complemented by the sweet wood and light vanilla scents of Missouri Oak.
Taste. The initial impression is bone-dry and crisp. Low cracker-like malt flavors are quickly overtaken by stone fruit and citrus zest. Hop bitterness is low, allowing the leathery Brett character and light oak tannins to shine. The finish is short, clean, and highly attenuated with a lingering mineral quality.
Mouthfeel. Medium-light body with high, spritzy carbonation that provides a champagne-like effervescence. Alcohol warmth is negligible, and there is a very slight, pleasant oak-derived astringency that enhances the dryness.
