This Missouri Wheat Saison presents a sophisticated sensory marriage of rustic grains and vibrant fruit. The inclusion of Oregon Red Plums imparts a delicate stone fruit brightness that complements the complex, tart acidity driven by local microflora. Maturation in wine barrels provides a subtle tannic structure and a whisper of oak, grounding the airy, billowy texture of the wheat base. Appearance. Hazy, light ruby to pinkish-orange in color (8-12 SRM). Features a dense, long-lasting ivory head with a slight pink tint and exceptional Belgian lace.
Aroma. High intensity with a complex blend of spicy black pepper phenols and vibrant red plum esters. Low floral hop character is present, supported by a soft, grainy wheat malt profile and a distinct lactic tartness with a hint of vinous oak.
Taste. Initial impression is tart and fruity, leading into a soft, grainy wheat palate. Hop flavor is low and floral, while hop bitterness is low, allowing the crisp acidity to balance the profile. Features spicy yeast character and juicy plum flavors that transition into a bone-dry, slightly tannic, and lingering tart finish.
