This sophisticated Brett Beer showcases the artistry of blending, using the Sunsets Saison as a vibrant canvas for intense red and black raspberries. The aroma is a complex tapestry of jammy fruit and rustic funk, featuring notes of wet hay and leather characteristic of a mature Brettanomyces fermentation. Vanilla beans weave through the sensory profile, softening the bright fruit acidity with a delicate, creamy rounding that enhances the beer’s depth. On the palate, the beer is strikingly dry and effervescent, where the tartness of the berries meets earthy phenols and a subtle woody structure. It concludes with a crisp, lingering berry finish and a whisper of floral yeast.
Appearance. Hazy, deep ruby-red to garnet with a persistent, mousse-like pink-tinted head and fine lacing; SRM 25-30 from fruit addition.
Aroma. High intensity; dominant fresh red and black raspberry puree, complex Brettanomyces funk (horse blanket, earthy), spicy phenols, and a smoothing hint of floral vanilla.
Taste. Initial burst of tart berry acidity followed by dry, rustic malt and earthy funk. Very low hop bitterness, though fruit skins provide a mild tannic structure. Vanilla adds a perceived sweetness that balances the acidity without adding residual sugar. Finish is bone-dry and crisp.
Mouthfeel. Medium-light body with high, prickly carbonation. Light, well-integrated alcohol warmth; exceptionally drying on the tongue with a clean, lively texture.
