This Missouri Saison from Side Project Brewing presents an elegant, fruit-forward interpretation of the classic farmhouse style. The additions of blueberry and rosehip integrate seamlessly with the rustic, grainy profile characteristic of the brewery's base. The blueberries lend a subtle, jammy depth without overwhelming sweetness, while the rosehip contributes a delicate floral lift and a hint of tart, berry-like tannin. A spicy, peppery yeast character typical of a Saison balances the fruit, leading into a bone-dry finish. Effervescent and bright, it highlights a harmonious interplay between local microflora and botanical additions, resulting in a refreshing and complex expression of a modern Saison.
Appearance. SRM 6-9; exhibits a unique pale orange to soft violet-ruby hue depending on light. It features a long-lasting, dense, rocky ivory head with excellent lacing. The beer is unfiltered and hazy with high effervescence.
Aroma. High aromatic intensity featuring a blend of blueberry fruitiness and floral rosehip. Moderate fruity esters of citrus and pear are layered over a distinct spicy yeast profile reminiscent of black pepper. Malt character is low and grainy, with a soft, earthy, and botanical herbal note.
Taste. Initial impression is a balance of soft blueberry tartness and peppery yeast spice. The rosehip provides a delicate herbal and floral complexity. Bitterness is moderate but perceived as firm due to the exceptionally high attenuation and very dry finish. Malt flavor is low and rustic, reminiscent of crackers or raw grain. The aftertaste is crisp, spicy, and lingeringly dry.
Mouthfeel. Medium-light body with very high carbonation, creating a prickly, effervescent sensation on the tongue. Alcohol warmth is light and well-integrated. No significant astringency despite the botanical additions.
