Side Project’s Pebble is an assertive Double IPA that masterfully executes the West Coast profile. The sensory experience is dominated by an intense hop trio: Simcoe provides deep notes of pine and forest berries, Centennial adds classic grapefruit and floral lift, and Columbus contributes a pungent, dank, and spicy depth. Built on a clean, neutral malt base, the beer presents a firm bitterness that transitions into a dry, resinous finish. At 8.3% ABV, it offers a smooth, integrated warmth that supports the aggressive hop character without overshadowing the crisp, lingering citrus peel and pine needle aftertaste.
Appearance.Deep gold to light amber (6–9 SRM) with brilliant clarity. Supports a moderate, persistent off-white head that leaves sticky lacing on the glass.
Aroma.High intensity hop aroma featuring prominent pine resin, grapefruit zest, and a dank, peppery quality. Subtle floral notes and hints of berry emerge as it warms. Malt is neutral and grainy in the background, with a clean fermentation profile and a light, smooth alcohol presence.
Taste.Strong hop flavors of resinous pine, citrus pith, and spice. Bitterness is high and assertive but clean, lacking harshness. The malt character is low, providing a soft, dry, cracker-like foundation. It finishes very dry with a lingering, resinous bitterness and a clean, warming alcohol note in the aftertaste.
Mouthfeel.Medium body with a smooth, slightly oily texture from high hop hopping rates. Carbonation is medium-high, providing a crisp bite. Features a restrained, smooth alcohol warmth without any hop-derived astringency.
