This masterfully blended Brett Beer, built upon the Saison du Fermier base, showcases a sophisticated intersection of wild fermentation and diverse wood aging. The sensory profile is dominated by the interplay of local microflora and varying oak treatments, featuring bright notes of lemon zest, underripe peach, and apricot. The use of French Oak and American Oak—ranging from light to heavy toast—provides a structural backbone of vanilla, toasted coconut, and subtle wood spice. A thread of Missouri Wild Ale aged in Chardonnay barrels introduces a vinous elegance, while the solera-aged Missouri Wild Blond Ale contributes a mature, bright acidity that balances the beer's rustic, barnyard funk.
Appearance. Deep gold to light amber (5-7 SRM) with a slight haze from the mixed culture. It pours with a lively, fine-beaded white head that shows moderate retention and leaves delicate lacing on the glass.
Aroma. High intensity with a complex profile of stone fruits like apricot and peach, layered over a rustic funk of wet hay and earthy leather. Prominent oak notes of vanilla and toasted wood are present, accompanied by a vinous, white grape character and a floral, citrus-like zest.
Taste. The initial impression is one of bright, tart acidity featuring flavors of sour lemon and pineapple.
