This elegant Missouri Saison showcases the distinct terroir of the Augusta AVA through the integration of Missouri Norton Grapes. The sensory experience begins with deep ruby hues and an aroma dominated by dark forest berries and elderberry, complemented by the characteristic peppery phenols and spicy yeast esters of a classic farmhouse ale. On the palate, the rustic grain bill supports a complex layer of vinous tartness and earthy, soil-like undertones—fitting of its namesake. Highly attenuated and effervescent, it finishes bone-dry with a lingering spice and a delicate, fruity acidity that balances the vibrant, dark fruit character of the grapes.
Appearance. Deep ruby to purple-red (14-18 SRM) from the grape skin contact; hazy to opaque clarity. Displays a long-lasting, dense, rocky head with a distinct pinkish-ivory tint and fine Belgian lace.
Aroma. High aromatic intensity featuring dark fruit esters of plum and elderberry from the Norton grapes. This is layered over a spicy yeast profile of black pepper and a low, grainy malt sweetness. A subtle, earthy, soil-like musk provides a rustic complexity typical of the terroir.
Taste. Initial impression is a sharp, vinous tartness followed by flavors of dark grape and blackberry. The fermentation character is driven by peppery phenols and fruity esters. Hop bitterness is low, as the fruit acidity provides the primary balance against the soft, grainy malt. Finishes very dry and spicy with a lingering, clean fruit skin astringency.
Mouthfeel. Medium-light body with very high, effervescent carbonation. Features a light, refreshing acidity and a crisp, bone-dry finish. Alcohol warmth is very low and well-integrated.
