Le Saisonnier is a delicate, table-strength Saison that captures the rustic elegance of old-world farmhouse ales through the lens of Missouri Oak Foedre aging. Brewed with European malts, it offers a soft, grainy foundation that supports a vibrant, assertive charge of European hops. The six-month rest in oak with Missouri microflora imparts a subtle, expressive tartness and a whisper of woody complexity. Expect a bone-dry finish characterized by high carbonation and a sophisticated interplay of peppery yeast phenols, floral hop notes, and a faint, lemony acidity. This naturally conditioned beer balances heritage ingredients with a vibrant, modern wild character.
Appearance. Pale straw to light gold (4 SRM). Topped by a long-lasting, dense, rocky white head that leaves intricate Belgian lace. Unfiltered with a slight, beautiful haze and visible effervescence.
Aroma. High intensity with a complex aromatic mix of peppery yeast and floral European hops. Low grainy malt character provides a cracker-like base. Expressive fruity esters of lemon and pear are complemented by a faint, earthy funk and a hint of neutral oak from the Missouri microflora.
Taste. Initial impression is bracingly dry and crisp. Low European malts offer a soft, grainy palate followed by moderate to medium-high hop bitterness. Flavors of black pepper and citrus zest dominate the fermentation profile. The finish is extremely dry and clean, with a lingering spicy and slightly tart aftertaste that remains refreshing.
Mouthfeel. Light body with very high, effervescent carbonation. There is no alcohol warmth present. It features a crisp, lively mouthfeel with a very low, refined oak tannin and no astringency.
