This barrel-aged Adambier presents as a monumental Old Ale, showcasing eighteen months of maturation in bourbon barrels that defines its sensory profile. The nose is an intense tapestry of toffee, caramel, and leather, punctuated by subtle peat smoke and rich vanilla. On the palate, a blend of seven German malts provides a dense foundation of dark dried fruits, molasses, and toasted bread. Bottled almost still, the texture is exceptionally viscous and chewy, allowing the complex vinous and wood-derived flavors to linger. Significant alcohol warmth from the 13% ABV is masterfully integrated, supporting a decadent, sweet finish marked by bourbon-soaked oak.

Appearance. Very dark reddish-brown to nearly opaque (SRM 35+). Head is minimal to non-existent, tan-colored, with very low retention due to high alcohol and near-still carbonation.

Aroma. High intensity. Dominant bourbon barrel character of oak, vanilla, and coconut, layered over a complex malt base of toffee and caramel. Pronounced esters of dark dried fruits like raisins and figs. Distinctive notes of leather and a faint hint of earthy peat.

Taste. Rich, luscious malt complexity featuring toffee, treacle, and deep caramel. Strong flavors of dark fruit—raisin and plum—mingle with bourbon-soaked oak. Low hop bitterness allows the malty-sweet balance to shine. Secondary notes of leather and subtle smoke lead into a long, warming, sweet finish with vinous maturation qualities.

Mouthfeel. Full, thick, and viscous body with a chewy texture. Carbonation is very low, bordering on still. Prominent, smooth alcohol warmth is present. Slight tannin from the extended wood aging provides structure.
