Längst (Blend #3) is a sophisticated Old Ale that bridges historic German tradition with modern barrel-aging mastery. Eighteen months in six-year-old Buffalo Trace bourbon barrels imparts a dominant barrel character, weaving rich bourbon sweetness through a foundation of seven German malts. The sensory profile is incredibly dense, defined by decadent layers of toffee, caramel, and leather. High-intensity notes of dark dried fruits like figs and raisins emerge from the fruity yeast strain, while curious whispers of peat add earthy complexity. Though inspired by the Adambier style, it drinks with the luxurious, warming, and almost still profile of a world-class aged English ale.

Appearance. Deep, dark reddish-brown with mahogany highlights; SRM 22+. Pours almost still with a very low, light tan head that dissipates rapidly to a fine ring; minimal lacing due to high alcohol and extended wood aging.

Aroma. High intensity with a complex blend of toffee, caramel, and molasses. Pronounced bourbon-soaked oak, vanilla, and leather from the Buffalo Trace barrels. Rich dried fruit esters—raisins and dates—are prominent, complemented by a subtle, earthy peat note and a soft vinous oxidation.

Taste. Initial impression is luscious and malty-sweet, featuring deep caramel, toffee, and nutty specialty malt flavors. The mid-palate introduces complex dark fruit and a notable bourbon presence. Hop bitterness is low, allowing the barrel tannins and alcohol to provide balance. The finish is long and lingering, showing oxidative notes of Sherry and leather with a graceful, warming character.

Mouthfeel. Full-bodied and viscous with a chewy, coating texture. Carbonation is very low, nearly still, enhancing the beer's richness. Significant alcohol warmth is present but smooth and well-integrated; light wood tannins provide a structural dryness.
