This sophisticated Missouri Saison presents a complex aromatic profile where traditional Belgian spicy yeast notes meet the unique floral character of Northwestern Meadowfoam Honey. The aroma is dominated by soft vanilla cupcakes, marshmallow, and a hint of wildflower, balanced by the rustic, earthy funk of Side Project’s local microflora. Six months in a Missouri Oak Foedre imparts a delicate structural tannin and a faint toasted wood note. On the palate, it is exceptionally dry and effervescent, showcasing bright citrus acidity, cracked black pepper, and a lingering, pillowy honey sweetness that remains aromatic rather than sugary, highlighting a masterful balance of wild fermentation and specialty ingredients.
Appearance. Pale gold to light orange (approx. 6 SRM) with a slight, uniform haze. Displays a dense, rocky, long-lasting white head with exceptional Belgian lacing and high effervescence.
Aroma. High intensity with a complex bouquet of fruity esters like lemon zest and pear. Spicy phenols of black pepper are prominent, alongside distinctive vanilla and marshmallow notes from the Northwestern Meadowfoam Honey. A rustic, earthy funk and subtle toasted oak from the Missouri Oak Foedre provide depth.
Taste. Bone-dry initial impression with a soft, grainy malt palate. Features a balance of tart acidity from local microflora and spicy yeast character. The Northwestern Meadowfoam Honey provides a flavor of vanilla cupcakes without residual sweetness. Low hop bitterness is supplemented by mild oak tannins, leading to a crisp, peppery, and extremely dry finish.
Mouthfeel. Medium-light body with very high, prickly carbonation. Exceptionally well-attenuated and bone-dry. Subtle oak-derived astringency adds structure, with light alcohol warmth and a clean, refreshing feel.
