Side Project Brewing

Fermier (Vintage 2023) represents a masterclass in the Missouri Saison tradition, artfully blending rustic Spelt with Side Project’s signature native microflora. The aroma is a sophisticated tapestry of lemon zest, orchard fruit, and a distinct peppery spice, underpinned by a delicate, earthy funk from the mixed-culture fermentation. On the palate, the Spelt provides a soft, nutty grain foundation that supports vibrant esters of apricot and dried hay. A firm but integrated acidity cuts through the medium-light body, leading to a bone-dry, effervescent finish. This flagship expression showcases a complex fermentation profile, balancing traditional farmhouse charm with a refined, contemporary elegance and exceptional dry character.

Appearance. Pale gold with a slight, protein-driven haze. It features a dense, rocky white head with exceptional retention and intricate Belgian lace. Highly effervescent with visible rising bubbles.

Aroma. High intensity. A complex aromatic blend of lemon pith, green apple, and white pepper. The native microflora contributes a clean lactic tartness and subtle earthy, leather-like funk. The Spelt adds a light, rustic graininess, while continental hops provide a faint floral and herbal backdrop.

Taste. Initial impression is bright and citrus-forward with lemon and pear esters. The Spelt offers a soft, bready, and slightly nutty malt flavor. Bitterness is moderate but perceived higher due to the very high attenuation and a subtle, refreshing acidity from the fermentation. Features a clean, dry, lingering peppery finish with no residual sweetness.

Mouthfeel. Medium-light body with a prickly, very high carbonation level that creates a lively, effervescent sensation. A subtle, well-integrated alcohol warmth is present. Finishes crisp and bone-dry with a clean, palate-cleansing effect.
