This Imperial Stout is a decadent masterclass in barrel integration, born from a collaboration between Side Project and Half Acre. Two years in Buffalo Trace barrels impart deep layers of charred oak, bourbon-soaked vanilla, and rich caramel. A secondary finish in VSOP Cognac barrels elevates the profile with sophisticated notes of dried stone fruits, raisins, and a refined vinous character. The underlying stout is immense, offering a base of bittersweet chocolate and espresso. At 16% ABV, the experience is profoundly warming and viscous, balancing intense roasted malt bitterness with the elegant, lingering sweetness of premium spirit-soaked wood.
Appearance.Jet black and completely opaque (40+ SRM). It pours with a thick, dark tan head that shows low retention due to high alcohol content. Heavy viscosity is evident, leaving thick legs on the glass.
Aroma.High intensity and extraordinarily complex. Initial waves of dark chocolate, espresso, and molasses are layered with Buffalo Trace-derived vanilla and toasted oak. The VSOP Cognac finish introduces distinct floral esters, dried apricot, and raisin, followed by a smooth, well-integrated alcohol presence.
Taste.Massive and multi-layered. Deeply roasted grain, bittersweet cocoa, and burnt sugar form the foundation. The mid-palate is dominated by bourbon-soaked oak, caramel, and spicy vanilla. The finish showcases the Cognac influence with concentrated dark fruit and a subtle vinous tang. Bitterness is moderate-high but smoothed by the long aging process, leading to a lingering, sweet, and warming aftertaste.
Mouthfeel.Very full-bodied, chewy, and viscous with a velvety, luscious texture. Carbonation is low, enhancing the beer's weight. A significant, smooth alcohol warmth is present but never harsh or solventy.
