This monumental Imperial Stout represents a masterclass in barrel integration and adjunct layering. Aged for up to 28 months in Weller 12yr and Rittenhouse Rye barrels, the sensory profile is dominated by an intense, four-fold infusion of raw and toasted coconut alongside creamy Mexican Vanilla Beans. A base of spicy Rye and a deliberate higher hopping rate provide a snappy, structural backbone that prevents the decadent 15% ABV frame from becoming cloying. Expect deep layers of bittersweet chocolate and espresso, underpinned by charred oak and spirit-driven warmth, resulting in a remarkably harmonious yet massive sensory experience.
Appearance. Jet black (40+ SRM) and completely opaque. Pours with a thin, deep tan head that dissipates quickly into a sparse ring, leaving an oily sheen and thick, slow-moving legs on the glass.
Aroma. High intensity. Dominant notes of toasted coconut macaroons and rich vanilla bean lead into secondary aromas of spicy rye grain, dark chocolate, and espresso. The barrel influence is profound, contributing charred oak, caramel, and a refined bourbon spirit character with subtle dark fruit esters like fig and prune.
Taste. Massive and complex. Initial flavors of sweet raw coconut and creamy vanilla are quickly balanced by bittersweet cocoa and heavy roasted grain. The Rye malt and firm hop bitterness provide a sharp, clean counterpoint to the rich adjuncts. The finish is long and evolving, featuring lingering notes of spicy oak, dark fruit, and warming bourbon.
Mouthfeel. Full-bodied and exceptionally viscous with a thick, chewy, and velvety texture. Low carbonation enhances the decadent weight. A smooth, significant alcohol warmth is present but remains well-integrated and never harsh.
