This massive Imperial Stout, a refined blend matured since 2016, presents an opulent sensory experience defined by its extraordinary 15% ABV and layered barrel treatment. Primary notes of bittersweet chocolate and espresso arise from a complex malt bill, seamlessly intertwined with the vanillins and charred oak of Willett Bourbon barrels. The secondary maturation in VSOP Cognac barrels introduces sophisticated nuances of dried figs, plums, and a vinous warmth. Expect a velvety, viscous texture that carries flavors of toasted marshmallows and dark fruit through a lingering, spirit-forward finish. The extended aging has mellowed the intense roast into a harmonious, decadent masterpiece of immense depth.
Appearance. SRM 40+. Jet black and opaque. A thin, dark tan head forms momentarily before receding to a fine rim, leaving oily legs on the glass indicative of high viscosity and alcohol.
Aroma. High intensity. Decadent layers of dark chocolate, black licorice, and espresso roast. The barrel influence is prominent, offering spicy oak, vanilla, and caramel from the bourbon, alongside a vinous, dried-fruit character including raisins and prunes from the VSOP Cognac barrels. Alcohol is noticeable but smooth and well-integrated.
Taste. Initial impression is deeply sweet and rich, immediately followed by intense flavors of cocoa powder, molasses, and burnt grain. The mid-palate reveals complex barrel notes—bourbon-soaked oak and a distinct grape-like fruitiness from the cognac barrels. Bitterness is moderate but balanced by the thick malt body. The finish is long, warming, and slightly vinous with a hint of tobacco.
Mouthfeel. Full to very full-bodied; thick, chewy, and coating. Carbonation is low. A significant but smooth alcohol warmth is present, providing a gentle glow without being harsh or solventy. Extremely velvety and luscious texture.
