Side Project Brewing

This opulent Imperial Stout presents a masterful orchestration of barrel-aged depth and luscious adjuncts. A base of intensely dark malts provides a canvas for Sump Coffee, which imparts layers of roasted espresso and dark chocolate. The dual influence of Mexican and Ugandan Vanilla Beans weaves a complex tapestry of creamy sweetness and floral spice, seamlessly integrating with the toasted, nutty richness of Coconut Flakes. Extended maturation in Bourbon and Rum barrels contributes notes of charred oak, molasses, and dark fruit. Despite its formidable 15% presence, the mouthfeel remains velvety and harmonious, concluding with a sophisticated, lingering, and warming finish.

Appearance. Jet black and completely opaque (SRM 40+). A thin, dark brown head forms with moderate retention, leaving thick, oily legs on the glass as it swirls due to high viscosity and alcohol.

Aroma. High intensity with a rich, complex blend of espresso-like roast, dark chocolate, and black licorice. Pronounced aromas of toasted coconut and floral vanilla intertwine with spirit-forward notes of bourbon, oak, and molasses-heavy rum. Subtle dark fruit esters of prune and fig are present.

Taste. Initial impression is intensely rich and bittersweet. Deep roasted malt and Sump Coffee flavors are balanced by the creamy sweetness of Mexican and Ugandan Vanilla Beans. The middle palate reveals toasted coconut and charred oak tannins. Hop bitterness is medium-high but balanced by a massive malt backbone. The finish is long and warming with lingering notes of dark chocolate and rum-soaked fruit.

Mouthfeel. Very full-bodied, viscous, and chewy with a luscious, velvety texture. Carbonation is low to moderate. A significant, smooth alcohol warmth is present but well-integrated, lacking any sharp or solventy edges.
