This elegant Saison showcases a deep integration of fruit and wood, pouring a vibrant, hazy garnet. The aroma is led by a concentrated burst of black currants, followed by nuances of toasted French Oak and the rustic, earthy funk of native Missouri wild yeast. On the palate, the assertive tartness of the berries provides a bright acidity that balances the underlying grainy malt character. Notes of white pepper and vinous tannins from the wine barrel fermentation add complexity, leading to a bone-dry, effervescent finish. Despite the 8% ABV, the beer remains remarkably nimble, offering a sophisticated harmony of dark fruit, spice, and wood-aged depth.
Appearance. Deep magenta to dark purple with a hazy to opaque clarity. Forms a dense, pink-tinted ivory head with moderate retention and delicate Belgian lacing. Effervescent carbonation is highly visible through the dark hue.
Aroma. High intensity. Dominant aromas of fresh and jammy black currants intermingle with vinous French Oak notes of vanilla and tannin. The fermentation profile is complex, featuring spicy black pepper phenols, citrusy esters, and a distinct rustic, earthy funk from native wild yeast.
Taste. Initial impression is tart and fruity. Deep black currant flavors lead into a mid-palate of soft, grainy malt and subtle oak spice. Hop bitterness is low, as the refreshing acidity provides the primary balance. Fermentation character is dry and spicy with lingering notes of dark berry skin and wine-like tannins. The finish is remarkably dry and clean with a lingering fruity tartness.
Mouthfeel. Medium body with high, effervescent carbonation. A noticeable but well-integrated alcohol warmth is present. Gentle astringency from fruit skins and oak tannins adds structure without being harsh or cloying.
