This American IPA presents a vibrant, tropical-forward sensory profile, defined by the zesty, lime-like intensity of Calamansi. The bright citrus is layered over a complex foundation of toasted coconut and the rich, creamy aromatic presence of Tanzanian and Madagascar vanilla. These ingredients augment the intense hop character typical of the style, lending a modern, exotic fruit complexity. A subtle Brettanomyces presence introduces a light, fruity ester profile, while the oak aging provides a structural depth. The beer remains decidedly hop-forward and bitter, finishing dry with a clean, grainy malt backbone that allows the interplay of citrus, vanilla, and tropical coconut to linger.
Appearance. Medium gold (SRM 7) with a slight, persistent haze. Features a medium-sized, off-white head with good persistence and delicate lacing.
Aroma. High intensity of sharp Calamansi citrus and tropical toasted coconut. Tanzanian and Madagascar vanilla provides a sweet, creamy aromatic layer. Low, clean, grainy malt supports the fruit. Light, fruity esters are present, though the profile is dominated by the citrus and tropical adjuncts.
Taste. Initial impression is zesty and hop-forward. Intense Calamansi lime and coconut flavors are supported by a mid-palate of creamy vanilla. Medium-high bitterness is well-integrated with the low, grainy malt. Finishes dry and hoppy with a lingering citrus and vanilla aftertaste that lacks any harshness.
Mouthfeel. Medium body with a smooth, slightly creamy texture. Medium-high carbonation provides a crisp mouthfeel. No significant alcohol warmth or astringency is present despite the wood-aged character.
