This monumental Imperial Stout presents a decadent tapestry of sensory layers forged by twenty-two months in Laird's Apple Brandy and Willett Rye Barrels. The profile is an intense fusion of dark chocolate and espresso, lifted by the floral sweetness of an Indonesian/Madagascar Vanilla bean blend and the piquant warmth of fresh ground cinnamon. On the palate, rich fudge and charred oak collide with bright orchard fruit and peppery rye spice. The extended maturation creates a harmonious, velvety liquid where the high alcohol provides a refined, glowing warmth rather than a sharp bite, culminating in a lingering, spiced-chocolate finish.
Appearance. Jet black and completely opaque (40+ SRM). Pours with a thick, dark brown head that recedes to a persistent collar; high viscosity is evident through heavy legs on the glass.
Aroma. High intensity. Deeply roasted malt notes of bittersweet chocolate and espresso are layered with spicy rye, oak, and a distinct apple skin fruitiness. The Indonesian/Madagascar Vanilla blend provides a lush, creamy perfume, complemented by the woody, aromatic snap of cinnamon and subtle dark fruit esters like raisins.
Taste. An opulent explosion of dark fruit, cocoa, and spice. Initial impressions of vanilla cream and milk chocolate transition into complex notes of fig and caramelized apple. The Willett Rye barrel influence adds a sharp spicy counterpoint to the malt sweetness, while cinnamon lingers in the background. Bitterness is moderate but masked by the massive residual sugar, leading to a long, warming, and velvety finish.
Mouthfeel. Very full-bodied, chewy, and exceptionally viscous with a luscious, motor-oil texture. Carbonation is low, accentuating the beer's weight. A significant, smooth alcohol warmth is present and well-integrated.
