This Missouri Saison presents a vibrant sensory journey, led by the bright, zesty perfume of Cara Cara Oranges. The citrus blends seamlessly with the signature wild yeast profile, offering layers of lemon peel, apricot, and a distinct rustic funk. Oak aging introduces structural depth, contributing soft vanillin and a dry, tannic edge that complements the high attenuation. Expect a delicate interplay between peppery phenols and floral Continental hops, while the base malt provides a subtle, grainy backdrop. Appearance. Hazy, deep gold to pale orange (SRM 6-8). Topped by a voluminous, dense, ivory head with excellent retention and intricate Belgian lacing. Highly effervescent with fine rising bubbles.

Aroma. High intensity. Dominant notes of fresh Cara Cara orange zest and juice, intertwined with spicy black pepper and earthy fermentation funk. Secondary notes of toasted oak, light vanilla, and a faint floral hop character. Low grainy malt sweetness provides a foundation for the expressive fruity esters.

Taste. Initial impression of tart citrus and rustic spice. The Cara Cara orange provides a succulent fruitiness that remains dry rather than sweet.
