Side Project's Bière Du Nord presents a refined, Missouri-inflected take on the classic Bière de Mars. This amber ale bridges the gap between malty richness and the brewery’s signature rustic complexity. Puncheon fermentation in wine barrels imparts a subtle tannic structure and vinous depth, complementing a base of toasted bread and light caramel. The extended aging allows for a smooth integration of stone fruit esters and a gentle, spicy yeast character typical of a well-conditioned Missouri Saison. It finishes remarkably dry, with a lingering echo of toasted grain and a soft, earthy hop presence.
Appearance. Deep amber to copper (14–18 SRM) with slight haziness typical of the style. Features a thick, persistent off-white head with excellent lacing and a creamy texture.
Aroma. Moderate to high intensity. Prominent malty richness with notes of toasted bread, biscuit, and light toffee. Low to moderate fruity esters reminiscent of dried apricot and pear. Subtle spicy and herbal hop character, with a faint vinous, oaky note from the puncheon aging.
Taste. Rich initial impression of toasted malt, Munich-style bread crust, and hints of caramel. Medium-low bitterness provides a malty balance without being sweet. Low spicy and peppery hop flavors emerge mid-palate, followed by a medium-dry, clean finish. Complexity is enhanced by a light, integrated wine barrel character.
Mouthfeel. Medium body with a smooth, silky, and creamy character. High carbonation provides a lively, refreshing lift. Noticeable but well-integrated alcohol warmth that remains smooth and never harsh.

Bottled in October after a final blend of this Puncheon Fermented Saison was reached, we allowed it to condition in the bottle until it was ready to share with you!
