The initial sensory impact is defined by a vibrant interplay of soft, pillowy wheat and a refined citrus acidity derived from aging in Chardonnay barrels. Perfumed notes of coriander and zesty orange peel merge seamlessly with the oak’s subtle influence, offering a bouquet of ripe stone fruit and lemon zest. On the palate, the local microflora introduces a bright, refreshing tartness that cuts through the creamy malt texture. Appearance. Straw to pale gold (2–4 SRM) with a very cloudy, hazy appearance that gives off a milky shine. It is topped by a dense, persistent white moussy head with excellent retention and lacing.
Aroma. Moderate-high intensity featuring zesty orange peel and lemony coriander blended with bready, grainy wheat aromatics. The Chardonnay barrels add notes of ripe white grape and subtle vanilla-oak, while the local microflora contributes a bright citrus acidity and a faint, rustic funk.
Taste. Soft bready malt and grainy wheat provide a foundation for vibrant orange-citrus and spicy coriander flavors. A refreshing, ripe citrus acidity from the microflora provides the structural balance typically found in hops, while subtle notes of white wine and oak emerge mid-palate.
