This elevated Witbier showcases a refined interplay between traditional Belgian spicing and Missouri Oak aging. Brewed with a significant portion of wheat and seasoned with coriander and orange peel, it radiates a vibrant bouquet of zesty citrus and delicate herbal spice. The influence of local microflora introduces a bright, ripe citrus acidity that transforms the soft, bready malt base into something remarkably refreshing. Six months of foedre conditioning imparts a faint, woody complexity while maintaining a crisp, lively character. The result is a sophisticated, naturally conditioned ale where the spicy yeast profile and rustic wild fermentation achieve a harmonious, elegant balance.
Appearance. Pale straw to light gold (3 SRM); hazy, milky appearance from unmalted wheat and yeast; persistent, dense, white moussy head with fine lacing.
Aroma. Moderate bready and grainy wheat maltiness with faint honey notes. High intensity of zesty orange peel and perfumy, lemony coriander. Distinctive sharp, lactic acidity and light earthy funk from local microflora, with a whisper of toasted oak.
Taste. Initial soft, bready wheat sweetness quickly followed by a tart, citrusy acidity. Prominent flavors of orange zest and spicy, herbal coriander. Hop bitterness is very low, allowing the crisp acidity to provide balance. The finish is exceptionally dry and clean with lingering notes of lemon pith and floral spice.
Mouthfeel. Medium-light body with a characteristic creamy smoothness from the wheat and oats. High carbonation provides an effervescent, prickly sensation. Refreshing acidity leaves the palate bright without any astringency or alcohol warmth.
