Imperial Stout 15 º
This massive Imperial Stout presents a masterful synthesis of extended maturation and blending. A deep, decadent sensory profile emerges from its time in Weller 12, Willett Family Estate Bourbon, and Blanton’s barrels, delivering an intense aroma of rich dark chocolate, fudge, and toasted coconut. On the palate, the experience is luxuriously thick and chewy, weaving together notes of bittersweet cocoa, charred oak, and a refined bourbon character. Despite the staggering 15% ABV, the alcohol is exquisitely integrated, providing a smooth, warming glow rather than harshness. It finishes with a long, harmonious resonance of dense malt and barrel-driven vanillin.
Appearance. Jet black and completely opaque (40+ SRM). It pours with a thick, deep tan to mocha-colored head that shows moderate retention and leaves viscous legs on the glass, indicative of high alcohol and sugar content.
Aroma. High intensity. Dominated by rich bittersweet chocolate, cocoa powder, and intense barrel-derived vanillin and sweet coconut. Deep notes of bourbon, toasted oak, and caramelized sugar blend with subtle dark fruit esters like raisins and dried figs. Hop aroma is absent.
Taste. Initial impression is remarkably rich and decadent. Layers of dark chocolate, fudge, and espresso roast are balanced by a significant bourbon presence and spicy oak. The barrel-aging provides a distinct coconut sweetness without the use of adjuncts. Bitterness is moderate but serves primarily to balance the massive malt backbone. The finish is long and lingering, showing a complex, harmonious interplay of spirit, wood, and dark grain.
Mouthfeel. Very full-bodied, viscous, and chewy with a velvety, luscious texture. Carbonation is low. A significant, smooth alcohol warmth is present and noticeable but perfectly integrated, lacking any solventy or sharp edges.
