Side Project’s Beer : Barrel : Time (2018) is a monumental Imperial Stout that showcases the mastery of non-adjunct barrel blending. Spent across Willett, Heaven Hill, and Knob Creek bourbon barrels for nearly two years, the beer exudes a decadent sensory profile dominated by rich chocolate and an evocative sweet coconut character derived entirely from the charred oak. The aroma is a saturated blend of vanillin and dark cocoa, leading into a viscous, fudge-like palate. Despite its 15% ABV, the spirit character is exquisitely integrated, offering a smooth, warming finish that balances deep roasted malts with sophisticated wood tannins.

Appearance. Jet black and completely opaque (SRM 40+). It pours with a thick, deep tan to mocha-colored head with moderate retention. Due to high viscosity and alcohol, prominent 'legs' or 'tears' are visible on the glass when swirled.

Aroma. High intensity with a complex layering of bittersweet chocolate, espresso, and toasted marshmallow. The barrel influence is profound, contributing aromatic notes of vanilla bean, caramel, and a distinct wood-derived coconut. Subdued esters of black currant and prune emerge as it warms, with a clean, vinous alcohol presence.

Taste. Initial impression is exceptionally rich and velvety, featuring flavors of dark chocolate truffles and bourbon-soaked oak. The malt profile provides a dense foundation of fudge and roasted grain, while the extended aging in Willett and Knob Creek barrels adds layers of spicy oak, caramel, and sweet coconut. Bitterness is moderate to firm but balanced by significant residual sweetness, finishing with a lingering, harmonious blend of roast and spirit warmth.

Mouthfeel. Very full-bodied and viscous with a chewy, luscious texture. Carbonation is low to moderate, providing just enough lift to the heavy body. A significant, smooth alcohol warmth is present, though it remains well-integrated without being harsh or solventy.
