Appearance. Deep mahogany to reddish-brown (SRM 18-24) with distinctive ruby highlights from the cherries. Displays a slight haze. Topped with a moderate, pink-tinted tan head with fair retention and fine lacing.
Aroma. High intensity aroma dominated by tart Balaton cherries, reminiscent of cherry skin and subtle cinnamon spice. This is layered with complex Missouri microflora notes of barnyard funk, damp earth, and aged leather. The Chambourcin Barrels contribute vinous red wine notes and toasted oak, while the malt base offers faint hints of toasted bread and caramel. No hop aroma is present.
Taste. The initial impression is a bright, tart cherry punch followed by a wave of complex funk. The flavor of Michigan Balaton Cherries is prominent, showcasing pie-like tartness and a spicy cinnamon-like quality. Moderate acidity provides structure. Oak tannins from the Chambourcin Barrels lend a drying, woody depth that balances the malt's light nutty and toasty sweetness. Bitterness is very low. The finish is exceptionally dry, lingering with notes of cherry pits and earthy Brett character.
Mouthfeel. Medium-light body with a soft, supple texture. Carbonation is moderate to high, providing a prickly effervescence that cleanses the palate. Low astringency from fruit skins and oak tannins. Minimal alcohol warmth is perceived.
