Side Project Brewing à la Table (Blend #4)

This inspired Belgian Single presents a refined, low-ABV profile designed for the table. It leads with a complex bouquet of wild Missouri yeast and bacteria, offering rustic funk and soft acidity alongside floral hop notes. The airy malt bill provides a delicate cracker and honeyed biscuit foundation, supported by the subtle structure of Missouri oak. Fermented with a house Saison blend, it delivers a dry, highly attenuated finish. Effervescent and refreshing, it bridges the gap between a monastic table beer and a wild farmhouse ale, characterized by its bright, spicy phenols and lingering, woody complexity.
Appearance. Pale yellow to light gold (3-4 SRM). Features a massive, billowy white head with excellent retention and intricate lacing. Clarity is mostly clear with a faint, luminous haze from the natural conditioning.
Aroma. Moderate to high intensity. Dominated by a complex blend of spicy pepper and clove phenols, coupled with earthy funk and lemon-peel esters from the wild Missouri yeast. Light floral and herbal hop notes intertwine with a faint, toasted Missouri oak character. The malt backdrop is low, suggesting crackery grains and a hint of honey.
Taste. Initial impression is crisp and dry. Soft bready and cracker-like malt flavors are quickly overtaken by spicy, black pepper yeast character and a bright, lactic tang. Moderate floral hop flavor and firm bitterness provide structure. The finish is bone-dry and clean, with a subtle, lingering tannin from the Missouri oak and a faint, grainy aftertaste.
Mouthfeel. Light body with an airy, fluffy texture. High, prickly carbonation enhances the refreshing quality. No alcohol warmth is present given the sessionable ABV. Very smooth despite the high attenuation.

à la Table is inspired by the classic Saisons of the past, meant to be shared "at the Table" with family and friends. Traditionally brewed to be low in alcohol and extremely refreshing, this inspired Saison was brewed with an airy and fluffy malt bill and fermented with wild Missouri yeast and bacteria and our house Saison blend before being aged in Missouri oak for several months and then being naturally conditioned in this bottle.
