Driven by indigenous yeasts and a patient three-to-six-month fermentation, it offers a sophisticated sensory profile of earthy funk, sun-ripened orchard fruit, and subtle leather notes. As a brut-style cider, it balances a robust tannic structure with a crisp, bone-dry finish. The bottle fermentation (prise de mousse) results in an exceptionally fine, champagne-like carbonation that lifts the complex, vinous character of the traditional apple varieties, delivering a cider of significant strength and terroir-driven character.

Appearance. Deep gold to light amber; brilliant clarity with a fine-beaded, effervescent mousse-like white head that dissipates quickly to a thin collar.
