Sibeeria Zima 2022 is a decadent English Barleywine, boasting a massive 36° Plato foundation that delivers an exceptionally syrupy, viscous character. Poured a deep ruby red, it presents a luxurious sensory profile where intense malty sweetness meets a complex fruit medley of tart cranberries, ripe cherries, and dark grapes. The addition of Ancho chillies introduces a sophisticated layer of smoked plums and a whisper of woodsmoke rather than heat. This full-bodied winter warmer is defined by its velvety, chewy texture and a well-integrated alcohol presence that balances the residual sugars. It concludes with a lingering, warming finish that highlights its extensive four-month lagering period.

Appearance. Deep ruby red with significant depth of color and brilliant clarity. Pours with a syrupy consistency that leaves visible legs on the glass. The head is a low, off-white foam with modest retention.

Aroma. High intensity with a very rich malt presence of caramel and toasted bread. Pronounced esters reminiscent of dark grapes, cherries, and cranberries. A subtle, integrated hint of smoked plums and earthy smoke from the Ancho chillies, with low floral hop character.

Taste. High rich, malty sweetness featuring complex layers of caramel and biscuit. Strong fruitiness dominates the mid-palate with notes of tart cranberry, dark cherry, and raisin. The Ancho peppers provide a unique dried fruit depth and a wisp of smoke without spice or heat. Hop bitterness is moderate but masked by the high gravity, leading to a moderately sweet, vinous, and warming finish.

Mouthfeel. Full-bodied and exceptionally chewy with a velvety, syrupy texture. Carbonation is low to moderate. A smooth, rounded alcohol warmth is prominent but well-integrated, providing a luxurious mouth-coating sensation.

Při každém vaření Zimy, našeho tradičního barley wine, se snažíme posunout svoje limity a tuhle sezónu jsme to pojali ve velkém: 36° Plato, 11.8 % Alk. a téměř 4 měsíce ležení v tanku. Většinu várky jsme uložili zrát do dubových barelů, takže se máte v budoucnu na co těšit, ale malou část jsme se rozhodli uvést na trh už teď v sudech a 330ml plechovkách. Husté pivo rubínově červené barvy a sirupovité konzistence s tóny brusinek, višní a tmavých hroznů s trochou dýmu z uzených papriček Ancho. Nečekejte pálivou pikantnost, spíš náznak uzených švestek v aroma.
