This Imperial Stout offers a decadent sensory journey inspired by Mexican hot chocolate. It opens with an intense aromatic profile of roasted Ecuadorian cocoa nibs and fragrant vanilla, layered with the earthy warmth of cinnamon. The addition of Ancho chillies introduces a sophisticated depth reminiscent of smoked plums and dried fruit. Despite the rich 29° Plato density, the palate remains remarkably structured, steering away from cloying sweetness toward a firm, bitter finish. The high alcohol content provides a velvety warmth that complements a gentle capsaicin tingle, creating a harmonious balance between deep roasted malts and festive, piquant spice components.

Appearance. Jet black and opaque (40+ SRM). Pours with a dense, persistent dark brown head that leaves thick lacing. High viscosity is apparent with visible legs on the glass.

Aroma. High intensity. Dominated by rich bittersweet chocolate and cocoa, supported by distinct vanilla and woody cinnamon. Significant notes of smoked plums and raisins emerge from the Ancho chillies. Deep roasted malt character provides a background of espresso and charred grain.
