Sibeeria One Farmer is a refreshing and highly attenuated Farmhouse Ale that elegantly balances rustic yeast character with the vibrant personality of fresh Saaz hops. This straw-colored ale presents an aromatic marriage of peppery phenols and stone fruit esters, underpinned by a distinctive herbal earthiness and a touch of resinous depth unique to the fresh hop harvest. The palate is defined by its crisp, grainy malt profile and a firm hop bitterness that leads to an exceptionally dry, clean finish. Effervescent and remarkably drinkable, it captures the essence of a traditional Saison while the wet-hop addition provides a lively, verdant contrast to the classic spicy fermentation profile.

Appearance. Pale straw to light gold (4–5 SRM). Boasts a dense, rocky, long-lasting white head with significant Belgian lacing. Unfiltered with a slight, attractive haze and high effervescence.

Aroma. Moderate to high intensity featuring a complex blend of spicy black pepper phenols and fruity esters reminiscent of lemon zest and pear. The fresh Saaz hops provide a pronounced earthy and floral character with a unique, vibrant resinous note. Low grainy, crackery malt remains in the background.

Taste. Initial impression is crisp and dry. Soft, grainy malt flavor is quickly overtaken by a bold yeast profile of pepper and light citrus. The fresh hop flavor adds a distinct earthy and slightly resinous quality. Moderate to firm bitterness is amplified by the high attenuation, leading to a bone-dry, refreshing finish with a lingering spicy aftertaste.

Mouthfeel. Light to medium-light body with very high carbonation that creates a prickly, effervescent sensation. Smooth and crisp with no astringency and very low, well-integrated alcohol warmth.
