This single-hop showcase celebrates the versatility of Simcoe and Cryo Simcoe within a contemporary Double IPA framework. Despite its hazy, modern appearance, the profile is defined by a punchy, resinous intensity and a surprisingly dry finish. Prominent aromas of fresh pineapple and bright citrus lead into a complex layer of forest pine, supported by a clean, neutral malt base. The bitterness is firm yet refined, characteristic of its heritage, while the mid-palate offers a tropical depth that balances the resinous qualities. Appearance. Gold with a distinct, persistent hazy opacity. Topped by a dense, moderate-sized white head with excellent lacing and retention.
Aroma. Intense hop aroma dominated by Simcoe. High notes of grapefruit and lemon citrus, followed by ripe pineapple and a distinct, sharp pine resin. Low, neutral grainy maltiness is purely supportive; fermentation is clean with no perceptible solvent-like alcohol.
Taste. An immediate, strong impact of citrus and tropical fruit—specifically pineapple—transitioning quickly to a complex resinous and woody pine character. Bitterness is moderately high and firm, but lacks harshness. The malt provides a soft, unobtrusive backdrop. It finishes dry and clean with a lingering hoppy and resinous aftertaste.
Mouthfeel. Medium body with a smooth, soft texture despite the bitterness. Carbonation is medium-high. Very light, smooth alcohol warmth is present but restrained. No hop-derived astringency.
