This collaboration American Stout is a bold return to form, eschewing modern adjuncts for a purely grain- and hop-driven profile. Brewed at 17° Plato with three distinct roasted malts, it offers a deep espresso-like complexity balanced by the aggressive resinous and citrus character of Cryo Cascade hops. The sensory experience is defined by intense pine needles and grapefruit zest cutting through a dark, bittersweet chocolate base. It pours with a lush, cascading head, delivering a clean yet powerful profile that highlights the assertive bitterness and heavy roast typical of the style, finishing dry and bracingly hoppy.
Appearance. Jet black and opaque (SRM 40). Features a thick, persistent light tan head that exhibits a beautiful cascading effect and leaves dense lacing on the glass.
Aroma. High intensity of roasted grain, characterized by espresso and dark chocolate. Assertive hop aroma follows with distinct resinous pine and citrus notes. Clean fermentation profile with very low fruity esters.
Taste. Initial impression is a bold wave of roasted coffee and bittersweet chocolate. Malt sweetness is low, providing a canvas for high hop bitterness and intense flavors of citrus zest and pine needles. The finish is dry with a lingering, pleasant roasted grain bitterness and a clean, resinous aftertaste.
Mouthfeel. Medium-full body with a creamy, smooth texture. Carbonation is medium-high. Provides a gentle, well-integrated alcohol warmth and a light, roast-derived astringency that enhances the dry finish.
