Cotopaxi is a vibrant Hazy IPA that erupts with a pungent, volcanic hop intensity. A sophisticated blend of Citra, Columbus, Nectaron, and Simcoe Cryo hops drives the sensory profile, with Nectaron providing succulent nectarine flavors while Citra and Simcoe Cryo contribute bright lime and pineapple notes. This New England IPA presents an extremely pale appearance and a streamlined, low-viscosity mouthfeel that enhances its thirst-quenching nature. The soft malt backbone supports the massive hop saturation, while Columbus adds a resinous depth, finishing with a smooth, restrained bitterness and clean character.

Appearance. Extremely pale straw (3 SRM), opaque with a luminous haze. Pours with a dense, meringue-like white head that demonstrates excellent retention and leaves thick lacing.

Aroma. High intensity hop-forward bouquet featuring distinct notes of fresh nectarine, lime zest, and sweet pineapple. Underlying these tropical notes is a faint, clean, grainy malt character and a touch of resinous pungency. Fermentation is clean with neutral esters.

Taste. Initial impression of tropical fruit juice. Massive hop flavors mirror the aroma, leading with nectarine and pineapple followed by a sharp lime citrus punch. The malt is supportive and lightly bready. Bitterness is moderate but soft, perfectly integrated to ensure a crisp finish without any hop burn or harshness.

Mouthfeel. Medium-light body with a smooth, soft texture that avoids being overly viscous or heavy. Moderate carbonation provides a lively lift, while a gentle alcohol warmth is present but well-integrated. No astringency.
